And why? Cinematography? Cars? Scripting and/or acting? Plot twists?
Skyfall, Shooter, and The Bourne Identity are my favorites at the moment.

I loved the American with Clooney for the Cinematography.

I remember watching The Bourne Identity on HD DVD in 2007. From what I remember it was pretty good. HD DVD is long dead by now.

Probably Skyfall. I mean, is this not the most pimp entrance to a casino you've ever seen?

Skyfall is a definite #1. It really is one top-notch movie. I could go on for days about what was done right, but the best thing has to be the lighting . The way they tied the writing's themes with the colors and light of the whole thing made for one amazing film. The fact that they combined both vibrant neon cityscapes with decrepit abandoned islands without either one looking out of place in the plot is stunning.
For older films, Hunt for Red October is another favorite of mine. It's more of a feel good badass film.
And for classics, North by Northwest. Mostly because I really like Hitchcock and it's interesting to see how the film influenced later genres.
For non-spy thrillers, Inception and Catch Me if you Can are both fantastic.

It's not a movie, but the BBC's production of Tinker Tailor Soldier spy starring Alec Guinness as George Smiley was brilliant. I'd also nominate The Day of the Jackal.

Enemy of the State and Eagle Eye

Skyfall was great till the Scotland part. After that it was just not Bond. I am a huge 007 fan, have watched all the films many times and for me most of them are the best movies in this genre. I am not a big fan of Bourne for some reason that I can't put my finger on, but enjoy Kill Bill(not specifically in this genre but...) and MI(even if I dislike Tom Cruise). Also
Patriot Games anyone?

Body of Lies any of the Bourne Trilogy movies.

In the midst of Smiley's People right now - and the Tinker Tailor with Gary Oldman is also excellent.

Argo
It's not car related, but it shows how a good spy operates. A good spy doesn't rescue a bunch of hostages with guns, explosives, and lazer guided missiles launched from UAVs, a good spy gets them out the front door without anybody realizing what the hell just happened until it's too late.

Canadian spies are so nice.

I second Eagle Eye.
I don't think it gets the praise it deserves.

Tinker, Tailor, Soldier, Spy
Bourne Identity
Any Daniel Craig Bond film

This is perhaps my favorite genre.
In no particular order:
This movie is fantastic, but you will leave it absolutely hating everything.
This is could almost be a prequel for Robert Redford's character in my next pick. The best selection of cars in this one from my choices.
Then the films that garnered my interest in the genre. The Jack Ryan films.
This one in the series gets crapped on a lot but I had watched it again recently and thought great.
The Bourne movies were great and I believe if it wasn't for them we wouldn't have the Bond films we now have. Skyfall is probably the most thriller like of the recent ones and certainly has the best cinematography, but Casino Royale is still my favorite of them.

Spy Games.
I saw it after midnight in a good mood long time ago and it's one of those movies if it happens to be running after some soccer game or something. I will probably watch it.
From Bond movies Casino Royale is my absolute favorite. Goldeneye got some nostalgia value and Pierce Brosnan to me is how Bond should act and look. Though Casino Royale is by far superior movie.

Collateral is a good one to add to that list
So is Miami Vice (2006)
I find them underappreciated because of their cast.

Skyfall is brilliant, as is Casino Royale, but more people need to pay attention to On Her Majesty's Secret Service. Yes, Lazenby isn't the best actor, but the film has some of the best actors of the time, great cinematography, a brilliant soundtrack, and an excellent plot. 10/10 film.

I can't pick just one favorite, but 'Ronin' is definitely top 5.

There's a VW Van. But I don't see any reference to the Paykan. How do you make a movie about Iran, without any mention to the Paykan?

I really really enjoy all of the Daniel Craig Bond movies. I wish he would do more.
Shooter is fantastic. I would like to see Marky Mark play Bob Lee Swagger in more movies from the series of books.
And two I really like;

Gotta go with The Bank Job and Inside Man. The Bank Job had superb story telling and Inside Man just had an awesome ending and storyline.

Excellent. Mwuahahahah. I like the books, and the movie adaptations have been pretty good. So there is ready made material for more movies.
I didn't like the idea of Tom Cruise playing Jack Reacher when I first heard about it. Given that Jack Reacher in the books is 6 foot 4" or so, and Tom Cruise is 5 foot 7" (googled). But he did a surprisingly good job of it.

Not a movie, but a mini-series... Tinker Taylor Soldier Spy. Because John LeCarré and Alec Guinness.
